Ingredients:
4 Pork Scotch Fillets4 Tblsp of Cravings Foods Spiced Apple Chutney
2 Tblsp of Vegetable Oil
2 Tblsp of Olive Oil
150g Medium Snowpeas
1 Tblsp unsalted Butter
250g Vine Tomatoes
150g Red Radishes
Method:

Use paper towels to pat the Pork Scotch Fillet dry. In a flat dish lay the fillets out and apply ½ the Spiced Apple Chutney to both sides. Cover and let marinate for 30 mins.
- While the Pork marinates, prepare the side dishes. Heat the oven to 160 degrees C. On a baking tray lay out the vine of tomatoes and thinly sliced radishes. Drizzle with Olive Oil and season well. Bake for 15 mins or until the Tomatoes have wilted and slightly brown.
- Blanch the snow peas in boiling water for 2 mins then remove and brush with butter and set aside.
- Scrape the excess apple chutney off the Pork to prevent burning. In an oven proof saucepan on medium heat, add Vegetable Oil and brown the fillets each side for 3 mins.
- Remove the tomatoes and radishes from the oven and turn the oven up to 200 degrees C. Brush the Pork Fillets with the other half of Spiced Apple Chutney then cover with foil and bake for 10 mins. Remove foil and bake a further 5-7 mins. Remove from the oven and let it rest for 5 mins.
- Arrange the Pork Fillets on a plate with wilted Tomatoes, Radish slices, Snow Peas.
- Brush the Pork with a little additional Spiced Apple Chutney and serve.
