Chilli Jam and Chicken Stir Fry

Ingredients:
1 tbsp Peanut Oil
600g Chicken Thigh Fillets, Thinly Sliced
½ Bunch of Shallots, Thinly Sliced
1 Red Capsicum, Thinly Sliced
100g String Beans, Sliced
1 tbsp Fresh Ginger
⅓ Cup Cravings Chilli Jam
¼ Cup Grated Palm Sugar
2 tbsp Lime juice
1 tbsp Fish sauce
½ Cup Thai Basil sliced thinly

Method:

  1. Heat ½ the oil in wok or saucepan. Stir Fry Chicken slices in small batches for 1-2 minutes until browned slightly. Transfer to a bowl to rest.
  2. Heat remaining oil over high heat. Add ginger, shallots, capsicum, beans and fry for 2-3 minutes until heated through. Add the Chicken, Chilli Jam, Palm Sugar, Lime juice and Fish sauce. Stir fry for 1-2 minutes until heated through. Add shredded basil and serve. Serve hot with steamed Thai Jasmine Rice.
